A warm and comforting soup with a hint of spice. The ideal soup for fall.

INSTRUCTIONS

  1.  In a soup pot, combine cream, water, parsnips, apples and thyme.

  2. Bring to a boil and reduce to a simmer. Watch that it does not boil over, which it is likely to do with the cream.

  3. Simmer until parsnips and apples are tender.

  4. Remove from heat. Strain solids from liquid, reserve liquid.

  5. Blend solids in Vitamix with the oil and reserved liquid. Add water as needed to achieve the proper consistency.

  6. Season to taste with salt & pepper.

  7. Preheat oven to 350 F.

  8. Toss pecans with oil and spices and mix until well coated. Transfer to a parchment lined baking sheet and bake until golden brown, about 7-10 minutes. Cool and chop for garnish.
