We always love to hear how our customers are using the olive oil. Jan Gessert, from Birmingham, Alabama, recently shared this recipe with us that got rave reviews in a potluck last weekend.
"I think it's the olive oil which makes it so good," Gessert says.

Couscous Salad
- 1 box dry couscous, prepared
- 1 can drained chick peas
- 1/2 C. feta cheese
- 1/4 C. chopped parsley
- 1 red pepper, chopped
- 1/4 large Vidalia onion, chopped
- 1 cucumber, peeled, deseeded, and chopped
Dressing
- 1/4 C. McEvoy Ranch Extra-Virgin olive oil
- juice of 2 - 3 limes
- salt and fresh ground pepper to taste
- 1/4 cup freshly grated parmesan cheese
Toss couscous, chopped vegetables and dressing, well and serve.
