Couscous Salad

We always love to hear how our customers are using the olive oil. Jan Gessert, from Birmingham, Alabama, recently shared this recipe with us that got rave reviews in a potluck last weekend. "I think it's the olive oil which makes it so good," Gessert says. Tracie's Couscous Salad
Couscous Salad
  • 1 box dry couscous, prepared
  • 1 can drained chick peas
  • 1/2 C. feta cheese
  • 1/4 C. chopped parsley
  • 1 red pepper, chopped
  • 1/4 large Vidalia onion, chopped
  • 1 cucumber, peeled, deseeded, and chopped
Dressing
  • 1/4 C. McEvoy Ranch Extra-Virgin olive oil
  • juice of 2 - 3 limes
  • salt and fresh ground pepper to taste
  • 1/4 cup freshly grated parmesan cheese
Toss couscous, chopped vegetables and dressing, well and serve.
