Willow has been bringing down bamboo shoots to the Ferry Building Shop and she asked me about cooking with them. They are quite easy to use and delicious. I saute them with peas as in this demonstration but I've used them with fava beans and added them to soups also. The shoots add a firm, creamy texture with a mild but distinctive flavor.
Slice through the outer layers of the bamboo shoots
slice the bamboo shoots on a bias
Pour oil in a saute pan
add shoots to medium temperture oil
I added peas to the bamboo shoots and salt and pepper
