Once you start incorporating McEvoy olive oil into your regular routine, having an established storage practice can help preserve the fresh flavors experienced after opening a bottle for its entire duration. We recommend finding a cool, dark, and dry location to store your olive oil. We bottle McEvoy Extra Virgin Olive Oil in dark green glass or place our clear bottles inside an opaque box to protect it from light and to ensure consistent quality. We also recommend using your oil quickly, preferably within four to six weeks after you open the bottle. Unlike wine, olive oil does not get better with age and contact with large amount of air in a half-filled bottle will reduce the positive flavors and speed up oxidation.
