Estate-grown and produced from the 2020 harvest of seven Italian olive varieties on our Ranch. Certified organic and certified Extra Virgin, our Traditional Blend has the aromatics of freshly cut grass and green olives.
The blend is quite complex with bright bitterness, and a peppery, pungent finish. The most prominent flavors in this year's oil are bitter greens, dandelion, chicory, radicchio, artichoke, and green grass. Aromas include delicate olive, green grass, and very early harvest green notes.
This medium-bodied olive oil is grass green at harvest, mellowing to a greenish-gold through the season. Our olive oil passes the strict quality standards of Olive Oil Commission of California and USDA to be rated Extra Virgin. To protect the oil from UV light, we use a dark antique green glass designed specifically to protect olive oil from degradation.
