Ingredients

15 fresh figs

About 1 cup cubed feta cheese, amounting to 15 pieces (one for each fig)

McEvoy Ranch Fig Bruschetta

2 tablespoons finely chopped pistachios

1 tablespoon McEvoy Ranch Organic Extra Virgin Olive Oil

Thyme leaves, to taste

Salt and pepper, to taste
Instructions
Preheat the oven to 400 degrees F.
Slice each fig once in half then a second time across, so that it creates a cross. Do not slice through the fig completely, so the bottom still holds it together.
Place 1 small cube of feta in the middle of each fig, then place in an oven-safe baking dish.
Top each fig with about a teaspoon of McEvoy Ranch Fig Bruschetta.
Drizzle with a tablespoon of McEvoy Ranch Organic Extra Virgin Olive Oil.
Sprinkle with thyme, salt, and pepper.
Bake in the preheated oven for 10 minutes, then broil for 1 to 2 minutes, or until the tops are caramelized.
Remove from the oven and allow to cool, sprinkle with the chopped pistachios, and serve.
