WHAT ARE REFINED COOKING OILS?

Refined cooking oils have become a staple of American kitchens due to an unfounded fear surrounding the smoke point of extra virgin olive oil (Check out our articleMythbusting: Is Cooking With Olive Oil Bad? to learn more). As recent studies have shown, though, olive oil is much healthier than any refined oil, even when cooked over high heat. So, what exactly are these unhealthy refined oils?

THE PROCESS OF REFINED OIL VS. OLIVE OIL
Refined oils are often extracted from plants using harsh chemical solvents. These are then purified and chemically altered to make them edible. The oils are extracted with hexane before being treated with acid, or purified with alkali, and bleached. They are often then neutralized prior to being filtered and deodorized to make them stable and palatable.

The high temperatures applied during the refining process remove all the valuable and natural elements from them. Instead, it increases the amount of trans fats which are known to increase bad LDL cholesterol, triglycerides, and reduces beneficial HDL cholesterol.

Unlike refined oils, however, high-quality olive oil is extracted from the fruit by physical means rather than chemical means, and includes no chemical compounds. The fresh olives are crushed in a mill and made into an olive paste before being softened and kneaded to develop their flavor. A centrifuge then separates the liquids from the solids and the fresh olive oil can be bottled and enjoyed. The process of making olive oil is much cleaner, healthier, and natural than the process of any refined oil!

WHY YOU SHOULD AVOID REFINED COOKING OILS
The process of synthesizing refined oils makes them far less healthy than olive oil.
