Instructions

  1. In a small saucepan, combine Champagne Vinegar, honey, and sliced pears. 

  2. Bring to a gentle simmer over medium heat and cook until the pears are soft. 

  3. Remove from heat and let cool to room temperature. 

  4. Transfer to a sealed container and refrigerate overnight. 

  5. To serve, pour a small amount of shrub over ice and top with sparkling water. Stir gently.
