Ingredients

  • 1 red onion, roughly diced

  • 1 red bell pepper, roughly diced

  • ½ lb fresh broccoli cut into florets

  • 1 yellow squash, sliced into rounds

  • 1 zucchini squash, cut into rounds

  • 1 ½ tbsp McEvoy Ranch Garlic Olive Oil

  • Salt & Pepper

Instructions

  1. Preheat oven to 425 F

  2. Place chopped vegetables in a large bowl. Drizzle olive oil and toss with salt and pepper until vegetables are evenly coated.

  3. Spread in a single layer on a baking sheet and bake for 15-20 minutes or until vegetables are tender.

  4. Enjoy!
